Lemon cupcakes and a sugar spun topping

These cupcakes were made for my baby cousin's 23rd birthday, 2 lemons per batch makes for a perfect sponge without the citrus becoming too over powering. 

Add the juice of 1 lemon to the icing, you will notice that faces look impressed and don't scrunch up. 

I am very critical of my own work but these were very good, the sugar spinning which I added to the top was fab. It added just enough sweetness and a bit of a crunch.
